Bagels

Ingredients
- 500g flour
- 270g water (room temp)
- 10g salt
- 20g honey
- 5g yeast
Directions
- Add all ingredients to mixer
- Mix for 8-10 minutes
- Bulk rise for ~2 hours (should double in size)
- Divide into 6 equal pieces (135g each)
- Shape into bagels (roll into a snake then attach it)
- Proof for ~2 hours
- Boil water with 1tbsp honey, 1tsp salt
- Preheat oven to 450F
- Boil bagels 45 seconds per side
- Bake 19 minutes
- Rest 30 minutes before cutting
Cinnamon Raisin
Add toppings at the beginning:
- 60g raisins
- 7g cinnamon
