Bagels

Ingredients

  • 500g flour
  • 270g water (room temp)
  • 10g salt
  • 20g honey
  • 5g yeast

Directions

  1. Add all ingredients to mixer
  2. Mix for 8-10 minutes
  3. Bulk rise for ~2 hours (should double in size)
  4. Divide into 6 equal pieces (135g each)
  5. Shape into bagels (roll into a snake then attach it)
  6. Proof for ~2 hours
  7. Boil water with 1tbsp honey, 1tsp salt
  8. Preheat oven to 450F
  9. Boil bagels 45 seconds per side
  10. Bake 19 minutes
  11. Rest 30 minutes before cutting

Cinnamon Raisin

Add toppings at the beginning:

  • 60g raisins
  • 7g cinnamon
