Ingredients

  • 1 ripe banana
  • 3 tbsp butter
  • 2 cups steel cut or rolled oats (not instant)
  • 2 cups mixed nuts
  • 1/4 cup maple syrup
  • 1/3 cup coconut flakes
  • 1 tsp salt (if using unsalted nuts)
  • 2 tsp vanilla extract
  • 2 tsp cinnamon

Directions

  1. Preheat oven to 200°F.
  2. Melt the butter in a bowl.
  3. Squash the banana together with the butter.
  4. Chop the nuts in a food processor.
  5. Add the nuts into the main bowl and mix well.
  6. Add the remaining ingredients and mix well.
  7. Evenly distribute on a baking sheet with parchment paper.
  8. Bake at 200°F for 5-6 hours, stirring every 30-60 minutes.
