My take on Jambalaya.

Ingredients ( Makes about 4 servings)

  • 1/2 lb of sausage
  • 1/2 lb of ground beef
  • 1/2 lb of kielbasa
  • 1 lb of shrimp
  • 1 yellow pepper
  • 1 red pepper
  • 1 green pepper
  • 1 1/2 onions
  • 4 tsp minced garlic
  • 4 small tomatoes
  • 2 cups rice
  • 4 cups bone broth
  • 2 homegrown chili peppers
  • 2 tbsp worcheshire sauce
  • chili powder
  • black pepper
  • salt
  • paprika
  • italian seasoning
  • fresh herbs thyme,oregano, sage, basil

Directions

  1. Dice peppers and onions
  2. In large saucepan/skillet add all the sausage the ground beef and start to brown (use oil of choice in pan, I like to use ghee)
  3. Add diced oinions.
  4. Add diced peppers (red, green, yellow, and chili pepper)
  5. Add garlic, chili powder, and italina seasoning.
  6. Chop up the kielbasa and add to pan.
  7. In separate pot, cook 2 cups of rice in 4 cups of bone broth instead of water, add salt and pepper.
  8. Chop up the tomatoes and add to main pan.
  9. When the rice is done add the rice to the main pan.
  10. Add paprika, garlic, worchestire sauce, another 2 tsp of italian pepper, black pepper. Go out ot garden and get a sprig of fresh sage, thyme, basil, and oregano and chop up and add.
  11. Add the pound of small shrimp and cook until shrimp is done (about 4 to 5 minutes).
  12. Remove from heat and serve immediately or else the shrimp will get tough.
