Sweet Potato Pudding
Ingredients
- 1 cup of flour
- 3/4 cup sugar
- 1 tsp salt
- 1 egg
- 1/2 cup butter
- 1 tsp salt
- 6 small sweet potatoes
- 1 tsp baking soda
- 1 tsp vanilla
- 1/4 tsp cloves
- 1/4 tsp cinnamon
- 1/8 tsp allspice
- 1/4 milk amount
Instructions
- Boil the sweet potatoes (unpeeled)
- Preheat oven to 400F
- Peel the sweet potatoes
- Mash the sweet potatoes
- Mix all ingredients together
- Put it in a baking pan (cast iron works well)
- Cook for 30-60 minutes
Variations
Eggless
You can substitute 1 TBSP cornstarch for the egg. This will make the inside more goey / pudding-like. It tastes just as good.
