Sweet Potato Pudding

Ingredients

  • 1 cup of flour
  • 3/4 cup sugar
  • 1 tsp salt
  • 1 egg
  • 1/2 cup butter
  • 1 tsp salt
  • 6 small sweet potatoes
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1/4 tsp cloves
  • 1/4 tsp cinnamon
  • 1/8 tsp allspice
  • 1/4 milk amount

Instructions

  1. Boil the sweet potatoes (unpeeled)
  2. Preheat oven to 400F
  3. Peel the sweet potatoes
  4. Mash the sweet potatoes
  5. Mix all ingredients together
  6. Put it in a baking pan (cast iron works well)
  7. Cook for 30-60 minutes

Variations

Eggless

You can substitute 1 TBSP cornstarch for the egg. This will make the inside more goey / pudding-like. It tastes just as good.
