Granola
Ingredients
- 1 ripe banana
- 3 tbsp butter
- 2 cups steel cut or rolled oats (not instant)
- 2 cups mixed nuts
- 1/4 cup maple syrup
- 1/3 cup coconut flakes
- 1 tsp salt (if using unsalted nuts)
- 2 tsp vanilla extract
- 2 tsp cinnamon
Directions
- Preheat oven to 200°F.
- Melt the butter in a bowl.
- Squash the banana together with the butter.
- Chop the nuts in a food processor.
- Add the nuts into the main bowl and mix well.
- Add the remaining ingredients and mix well.
- Evenly distribute on a baking sheet with parchment paper.
- Bake at 200°F for 5-6 hours, stirring every 30-60 minutes.
